What You’ll Need

  • Prairie Fresh® boneless pork shoulder, 2 lbs. (cut into ½-inch cubes)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups apple cider
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 2 Granny Smith apples (peeled, cored, and sliced)

Directions

  1. Preheat the oven to 325 F. Season pork with salt and pepper.
  2. Add oil to a Dutch oven or any covered, oven-ready pot. Heat on high.
  3. Sear the pork until all sides are browned. Remove pork to a plate.
  4. Add onions and garlic to the pot and cook for 2 minutes.
  5. Add apple cider, chicken stock, and thyme. Stir well and bring it to a boil.
  6. Remove from the heat and add the pork back into the pot. Cover with sliced apples.
  7. Place the lid on the pot and cook in the oven for 2 ½ hours or until tender (175 F).
  8. Remove from the oven and allow the pork to rest in the braising liquid for 10–15 minutes before serving.
