Italian Sausage Soup

What You’ll Need
- 1 lb. Garozzo's by Prairie Fresh ground pork sausage
- 2 large diced russet potatoes
- 2 bunches diced celery
- 2 large diced carrots
- 2 cups diced tomatoes
- 1 large diced yellow onion
- 2 teaspoons diced fresh garlic
- 1 cup frozen peas
- 48 ounces chicken stock (can substitute with beef stock)
- 1/4 cup olive oil
- salt
- pepper
- Optional: grated Percorino Romano or Parmigiano cheese
Directions
- Dice and chop the potatoes, celery, carrots, tomatoes, onion and fresh garlic.
- In a sauce pot, add the sausage and 1/4 cup olive oil on medium-high heat.
- Stir occasionally so the sausage doesn't burn and stick to the pan.
- Once the sausage begins to brown, add all ingredients except the stock.
- Stir and cook for 5 minutes until incorporated.
- Add stock and simmer for 20 minutes.
- Add salt and pepper to taste.
- Optional but recommended to sprinkle grated Pecorino Romano or Parmigiano cheese on top.
