What You’ll Need

  • 1 lb. Garozzo's by Prairie Fresh ground pork sausage
  • 2 large diced russet potatoes
  • 2 bunches diced celery
  • 2 large diced carrots
  • 2 cups diced tomatoes
  • 1 large diced yellow onion
  • 2 teaspoons diced fresh garlic
  • 1 cup frozen peas
  • 48 ounces chicken stock (can substitute with beef stock)
  • 1/4 cup olive oil
  • salt
  • pepper
  • Optional: grated Percorino Romano or Parmigiano cheese

Directions

  1. Dice and chop the potatoes, celery, carrots, tomatoes, onion and fresh garlic.
  2. In a sauce pot, add the sausage and 1/4 cup olive oil on medium-high heat.
  3. Stir occasionally so the sausage doesn't burn and stick to the pan.
  4. Once the sausage begins to brown, add all ingredients except the stock.
  5. Stir and cook for 5 minutes until incorporated.
  6. Add stock and simmer for 20 minutes.
  7. Add salt and pepper to taste.
  8. Optional but recommended to sprinkle grated Pecorino Romano or Parmigiano cheese on top.
