Original Breakfast Sausage Quiche

What You’ll Need
- 6oz. Prairie Fresh® Original Breakfast Sausage
 - 1 quiche dough
 - 1 teaspoon olive oil
 - 2 shallots, cut into ¼-inch rings
 - ½ cup mini peppers, cut into ¼-inch slices
 - ½ cup asparagus, cut into ¼-inch pieces
 - ½ cup yellow squash, cut into ¼” slices
 - 2 eggs
 - 2/3 cup milk
 - 2/3 cup cream
 - ½ teaspoon salt
 - ½ teaspoon fresh cracked black pepper
 - ½ cup grated cheddar cheese
 
Directions
- Preheat oven to 350 F.
 - Heat a medium sized sauté pan over medium heat and brown the sausage while crumbling it into pea sized crumbles. Cook for approximately 7-10 minutes or until cooked through.
 - Transfer the sausage to a tray.
 - Return the sauté pan to the heat and add the olive oil. Sauté the shallots and peppers for approximately 3 minutes or until lightly cooked. Add the asparagus and squash and cook for an additional 3 minutes. Transfer the vegetables to the tray with the sausage.
 - Whisk the eggs, milk, and cream together until fully combined. Stir in the salt and pepper.
 - Add the sausage, vegetables, and grated cheddar cheese to the quiche crust and pour in the custard.
 - Place aluminum foil on the edges of the quiche to prevent it from over browning.
 - Bake the quiche for 45-55 minutes or until completely set in the center.
