What You’ll Need

  • 1 Prairie Fresh® pork tenderloin
  • 1 teaspoon seasoning salt, to taste
  • 1 teaspoon black pepper
  • 1/2 teaspoon adobo seasoning
  • 1 red onion, quartered with root intact for grilling
  • 1 green & red pepper, cut into chunks
  • 1 sweet potato, skin removed and sliced thick
  • 1 tablespoon of vegetable oil for grilling
  • Extra virgin olive oil

Directions

  1. Season pork tenderloin with seasoning salt, pepper and adobo seasoning.
  2. Set grill to medium high heat at 375-400 degrees F. Place the pork tenderloin over direct heat for about 3-5 minutes per side. Move the pork tenderloin to indirect heat until internal temperature reaches 145 degrees F. Allow a three-minute rest.
  3. Season all veggies with salt, pepper and a little extra virgin olive oil.
  4. Add all red onion & peppers to direct heat to get a good char on them for about 5 minutes depending on how hot your grill gets. Cook veggies over medium high heat for 2-3 minutes on each side.
  5. Add sweet potatoes to grill and cook over medium heat for 3-4 minutes on each side to get a good char then transfer to indirect (low) heat to continue cooking for 2 minutes.
