Grilled Pork Tenderloin Body Flex Bowl

What You’ll Need
- 1 Prairie Fresh® pork tenderloin
- 1 teaspoon seasoning salt, to taste
- 1 teaspoon black pepper
- 1/2 teaspoon adobo seasoning
- 1 red onion, quartered with root intact for grilling
- 1 green & red pepper, cut into chunks
- 1 sweet potato, skin removed and sliced thick
- 1 tablespoon of vegetable oil for grilling
- Extra virgin olive oil
Directions
- Season pork tenderloin with seasoning salt, pepper and adobo seasoning.
- Set grill to medium high heat at 375-400 degrees F. Place the pork tenderloin over direct heat for about 3-5 minutes per side. Move the pork tenderloin to indirect heat until internal temperature reaches 145 degrees F. Allow a three-minute rest.
- Season all veggies with salt, pepper and a little extra virgin olive oil.
- Add all red onion & peppers to direct heat to get a good char on them for about 5 minutes depending on how hot your grill gets. Cook veggies over medium high heat for 2-3 minutes on each side.
- Add sweet potatoes to grill and cook over medium heat for 3-4 minutes on each side to get a good char then transfer to indirect (low) heat to continue cooking for 2 minutes.
