What You’ll Need

  • Prairie Fresh® pork tenderloin, sliced into thin strips*
  • 14 oz udon noodles, fresh or frozen
  • 1 tablespoon sesame oil
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 small yellow onion, thinly sliced
  • 2 cloves garlic, minced

 

For the sauce

  • 1 teaspoon sesame oil
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • ¼ teaspoon chili flakes

 

For the garnish

  • Sesame seeds
  • Sliced green onion
  • Chopped peanuts

Directions

  1. In a small bowl, whisk together sesame oil, soy sauce, oyster sauce, and chili flakes. Set side.
  2. Bring a large pot of lightly salted water to a boil.
  3. Add udon noodles to boiling water, stirring occasionally. Cook as directed or until noodles are tender yet firm to the bite, about 10–12 minutes. Drain and set aside.
  4. Season the sliced pork with salt and pepper. 
  5. Heat 1 tablespoon sesame oil in a large sauté pan over medium heat, then add sliced pork.
  6. Cook pork strips in the hot oil until just browned, 5–7 minutes. Remove pork and set aside.
  7. Add peppers, onion, and garlic to the pan and cook for 3-5 minutes, stirring to prevent burning. 
  8. Return pork to the pan and add the udon noodles.
  9. Stir in the prepared soy sauce mixture and toss gently to cover everything with sauce.
  10. Serve hot in bowls and garnish with sesame seeds, sliced green onions, and chopped peanuts.
