What You’ll Need

  • 1 Prairie Fresh Signature Hawaiian Sea Salt & Black Pepper Pork Loin Filet
  • 2 cans of pineapple chunks (reserve juice)
  • 1/3 cup soy sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons garlic, minced
  • 1/3 cup brown sugar
  • 1/3 cup ketchup
  • ½ cup cornstarch
  • ½ cup water

Directions

  1. In a saucepan, sear pork loin filet and set aside.
  2. In a large bowl, combine pineapple juice (reserve pineapple chunks), soy sauce, rice vinegar, garlic, brown sugar, and ketchup.
  3. In separate, small bowl, dissolve cornstarch in water and then pour into larger bowl to combine with the rest of the sauce.
  4. In a slow cooker, add pineapple chunks and then pork loin filet.
  5. Pour sauce mixture over pork and pineapple chunks.
  6. Cook and cover on low for 5-6 hours.
  7. Remove loin filet and slice.
  8. Service loin filet, sauce, and pineapple chunks over white rice.
